Biscuit mix:

6 cups flour

1 tbsp sugar

1 scant tbsp salt (optional)

3 tbsp baking powder

1/4 pound cold butter

Mix the four dry ingredients thoroughly with a whisk or fork. Cut in the butter, or rub it in with your fingertips, until almost no lumps are seen. Pack this 1 cup at a time in snack or sandwich bags, then pack the bags into a freezer bag or container and freeze it. Good for six months or more.

To use: preheat oven to 450F. Lightly grease a small baking sheet. Combine 1 cup mix with 1/2 buttermilk substitute. Divide into six portions (either just by drop, or roll into a rectangle and cut) and bake for 15-18 minutes or until nicely brown but not burned.

Buttermilk substitute:

Combine 1/2 cup milk with 1 tsp white vinegar or lemon juice. Stir gently and let sit for 5 minutes.

Variations: grated cheese, Bacon bits, green onion, caraway seed, poppy seed, dried fruit such as raisins or cranberries or spices like cinnamon - in various combinations - can all be added (just not all at once!) at the mixing stage to change up the flavour.
